Cottonworth Classic Cuvee
Region : United Kingdom > Hampshire > Test Valley
Tasting Note : Floral and aromatic with hints of brioche, bready notes and some citrus / lemon notes. It has a good mousse and is fresh and clean on the palate with good, chalky minerality. It has a clean, dry and persistent on the finish.
Blend : 60% Chardonnay, 27% Pinot Noir, 13% Pinot Meunier.
Wine Making : Traditional method. The grapes were pressed gently in a traditional basket press, then the juice fermented in a mixture of temperature-controlled stainless steel tanks and barriques. The wine was then blended and bottled for the second fermentation, and spent several years on lees before disgorgement.
Ageing : Several years in the bottle following steel tank fermentation.
ABV : 12.5%
Drink With : Goats cheese, appetizers, shellfish.
