Gusbourne Estate Brut Reserve

Tasting Note : A very subtle nose gives hints of ripe yellow apple and a gentle creaminess. Fine fizz on the palate brings out freshness with notes of green apples and ripe lemons. Hints of buttery biscuits and a long lemony finish.
Blend : 60% Chardonnay, 22% Pinot Noir, 18% Pinot Meunier.
Wine Making : Traditional method. 10 days at 18 - 20 degrees C using specialist sparkling wine yeast. Fermented in temperature controlled stainless steel tanks with a small percentage fermented in old oak barrels for complexity. Malic acid was turned into softer lactic acid through malolactic fermentation.
Ageing : Aged on the lees for at least 36 months with a small proportion fermented in old oak barrels.
ABV : 12%
Drink With : Canapes, sushi, tuna tartar, truffle pasta, mushroom risotto.
